Good Morning Friends,
I hope everyone is having a wonderful week! I can’t believe its already well into March and we’re celebrating St. Patty’s day!! Hopefully, this winter weather will permanently pass us soon but until then, I’M STILL ON THE WHOLE 30! If you’re new to Socially Fit and want a recap of why I’m doing this, what exactly I’m doing, and how I’m feeling, check back here for the week 1 post.
Anyways, this is my week 2 recap! I’m so impressed with myself, I HAVE COOKED EVERY MEAL I’VE EATTEN THIS WEEK! Yes, I’m serious! Not that Snap Kitchen isn’t amazing and convenient, but the meals get boring for me and I was way too interested in all the amazing Whole 30 meals I have been seeing on Pinterest and in Facebook support groups. So I did it!
Later, I’ll make sure to do a post with all of the amazing recipes I have been cooking up but until then here’s an idea of what I’ve been eating:
Breakfast: Breakfast Hash – Chicken Apple Sausage, Bacon, Bell Peppers, Sweet Potato with a side of Guac for my healthy fat or Coconut oil in my coffee.
Lunch: Chicken Salad with Compliant Chipotle Lime Mayo on a bed of lettuce.
I’ve also had leftovers from the dinners I’ve cooked.
Spaghetti & Sausage – Zucchini Noodles, Sweet & Spicy Italian Chicken Sausage, and Compliant tomato sauce.
Egg Roll in a Bowl – Cabbage, carrots, onion, chicken, sesame seeds and coconut aminos.
Fried Cauliflower Rice – Cauliflower rice, peas, carrots, egg, onion and coconut aminos.
AND I FEEL AMAZING! Not only has cooking become extremely enjoyable, but I have so much energy! I’m sleeping better too. Now, y’all know I can’t step on a scale until after my 30 days, but I can tell y’all this, my clothes are seriously looser already. A close friend of mine that has been my accountability buddy through this, cheated and jumped on the scale at a doctors office…She had already lost 10 lbs! Shout out to Tricia for doing an amazing job so far!
